Oatmeal and Pumpkin Protein Cookies

Ingredients: 

  • 1.5 cups of old fashioned oats
  • 1 can pure pumpkin (15 oz)
  • 4 scoops vanilla protein
  • splash of vanilla extract
  • 1/2 cup splenda
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • chopped walnuts (optional)

Directions:

– Preheat oven to 325 degrees

  1. Mix all ingredients together
  2. Use a cookie scoop and pile about 20 onto a lined baking sheet
  3. Bake for 18-20 minutes
  4. Chill in the fridge for a few hours
  5. Eat them. Stay lean.

Each Cookie:
Calories – 50
Fat – less than 1 gram
Carb – 4 grams
Protein – 6 grams
