Ingredients
- 1.5lbs (24oz) cod fish (or fish of choice)
- 1 – 15oz can low sodium diced tomatoes with Italian herbs
- 1 bag spinach
Direction
- Preheat oven to 325 degrees
- Place spinach in oven safe dish
- Put cod fillets on top of spinach
- Evenly spread tomatoes over cod fish
- Bake for ~20 minutes or until desired doneness
- Serve with a side salad, if desired.
