Ingredients
- 1lb. of Lean Italian Sausage (hot or mild)
- 2 Sweet Potatoes
Directions
- Heat oven to 350 degrees.
- Slice sausage into 1-2 inch pieces.
- Peel and dice up sweet potato.
- Spray bottom of baking tray with Pam Spray.
- Stir occasionally so that sausage and potatoes don’t stick.
- Let bake for 30-45 minutes, depending on how well you like your sausage cooked.
- Makes 4 servings.

I admit that I am what some may call a “bland” eater, but the above is delicious to me just the way it is. If you are a little more “open-minded” with you food selection, you can throw lots of vegetables in while baking the sausage and potatoes that could give you even more variety.
